Because we don't send out an email every time there is a sale, or a race, or an event at the store, or at a school, or in the community, we post these things on Facebook. We post maybe once a week, to keep it unobtrusive. It isn't about promoting product, but rather about events in the running and walking world, goings-on in the community, and sometimes the accomplishments of some of its members.

AND, as many of you know, we also do a drawing among all our Facebook friends for a free pair of shoes every three months, to keep things interesting!

See you there!

Fun Recipe

Summer Rolls!

From Eila DeBard Johnson's wonderful Full Plate Blog

Summer rolls are one of those favorites that you always order at an Asian restaurant or pick up at the sushi deli case. But how often do you make them at home? They're actually quite simple to make, once you have good rice wrapper skins. They are usually available at Whole Foods for example, or at your favorite Asian market.
Ingredients:

  • fresh mint, or even more fun, look for shiso, a sweet, delicately flavored Japanese mint
  • shredded cabbage
  • shredded carrots
  • mango, cut into matchsticks
  • cucumbers, cut into matchsticks
  • shrimp (optional)
  • spring roll wrappers (ideally brown rice)
  • large bowl of warm water
  • cutting board big enough to fit the round wrapper

Preparation:

  • Dip a *single* rice spring roll wrapper (one at a time!) into your bowl of warm water, until it just starts to become malleable (30 seconds or so).
  • Place it flat on your cutting board and pop your choice of fillings in the center (see photos below).
  • Roll up, like a burrito: sides in first, ideally meeting; then one end comes up and over; then roll the whole little package until the other end fully covers the goodness inside.
  • Will store, covered, in the fridge for 1-2 days.
To complete the dish, Eila suggests a non-peanut alternative to the traditional dipping sauce:
  • 1 cup raw tahini (ground sesame seeds)
  • 1" piece fresh ginger root, skinned
  • 1/2 cup water
  • juice of 3 lemons
  • 1/4 cup maple syrup
  • 4 Tablespoons sesame oil
  • 3 Tablespoons Tamari, a thicker, richer, and less salty type of soy sauce
Combine all ingredients in a blender or Cuisinart and pulse until smooth. Stores in fridge for several days.

For far more details and inisight into this fresh, simple dish, check out the recipe page at the Full Plate Blog.

Thank you Eila!
