Fun Summer Recipe

We thought we'd share a simple, refreshing and delicious summer recipe with you this month.

This is a watermelon salad idea that we picked up at a restaurant once, and that several of us at the store have been making when it gets hot outside. The ingredients are:

  • Watermelon
  • Feta cheese, or your favorite goat cheese
  • Honey (the liquid kind)
  • Fresh mint, chopped
  • Red onion, sliced very thin
  • Balsamic vinegar
Cut the watermelon into 1-inch cubes, roughly. Throw in the feta cheese (maybe a 6oz "tub" for a 4-person salad), mint and onion. Drizzle with balsamic vinegar to taste (some people add olive oil as well). And finally, pour in as much honey as it takes to coat all the watermelon generously. You may decide to add more or less honey depending on how sweet you like things. Mix it all up, clean hands are sometimes easier than traditional salad servers.

Usually you will end up with a large amount of liquid at the bottom of the bowl. We like to strain most of it out of the bowl, and save it as salad dressing, or even as a something to mix in to a dirty martini-type of cocktail. It's basically sweetened watermelon juice with mint and it's wonderfully refreshing.

Serve chilled and enjoy!
